Egg tips
• Always work hygienically
• Use flawless and clean eggs
• Split up eggs with an egg splitter in egg white and egg yolk
• Avoid contact between egg shell and egg content
• Avoid egg yolk mixing with egg white of you need to whip it
• Whip egg white in a fat free bowl and use a clean whisk
• Prepare a light dessert short in advance and keep it in the fridge until use
• Consume a dish with raw egg on the day of preparation and keep no leftovers
• Do not serve raw egg to so-called risk groups such as patients or convalescents, pregnant women, breastfeeding women, children under 5 years and elderly people.
